 Chef Moy to helm cuisine of upscale boutique hotel

Within the month, TikTok sensation Raymund Salazar will enliven the epicurean experience of diners at the White Fence restaurant in Puerto Princess. As the dining hub of Purple Fountain, the 11-room boutique hotel of the Mango Tree Group, the restaurant will continue to offer its bestsellers and regular staple with new concoctions thrown in.

Chef Moy, as colleagues and friends call him, even ups the gastronomic ante by opening a cocktail bar where both gourmands and gourmets can call their new watering hole. What's more, there will be nights where unlimited wine will be served with delectable cheese platters. "We specify the wine notes to our suppliers - those that will complement most of the food that we'll prepare. We are located near the airport, right in the middle of a food strip. So we are in a prime location. We could also be an events place as we can accommodate up to a hundred covers. We are also open for catering services where we can also easily set up a mobile bar."

Guests will even get to taste his special cocktail mix he calls "Kasal." It is a vodka-based drink that's concocted in an airtight jar with all-spice, cloves, white wine, and apple juice that would bring out all the cheese flavors that would thrown into the mix. "The stronger the vodka base, the better!"

Chef Moy started his TikTok journey after a brief exposure on a friend's account. Some of the subscribers from the said channel started asking who he was. This necessitated his friends, who had TikTok accounts, to set up an account for himself. Fortunately, his account readily gained 20,000 followers even before he posted content therein. Now, he finds the need to post more often, like thrice a week, to maintain traction. Some of his posts even garner over a million views!

"I view online 'hate' as constructive criticism and a reason to do better. The type of food I post online depends, largely, on the available resources when my videos are made, and/or on what I may have purchased from the market on the day of posting."

Chef Moy currently enjoys more than 150,000 followers (and counting) on the social media platform TikTok. He would soon start posting content on his other social media accounts.

He obtained his Bachelor of Science in International Hospitality Management, specializing in Culinary Arts from Endurun College. His training was from a Michelin-starred chef who advocated much of Alain Ducasse's haute cuisine style. "My forte is on Bacolod cuisine, as well as cocktails and mocktails. I wasn't that good with pastries before, but I'll give it a try now. Our clientele base are those of frequent travelers and the corporate set. When we will be fully operational, our menu would change every 2-3 months, so our guests and diners get to sample something different with each visit."

His pipeline projects include updating the Filipino cuisine staples of an upscale restaurant that would be opening very soon, around the first quarter of 2023. "We will also be opening a deli and resto stopover in one. This is one establishment not fully explored in most areas, Palawan included."
